From late April through St. Johanni's Day in June, Bavarians celebrate the arrival of spring with the beloved Weißer Spargel—white asparagus, known as the "Queen of Vegetables". At Bavarian Grill in Plano, Texas, we honor this tradition by importing over 1,200 pounds of premium XXXL white asparagus directly from Germany, featuring thick spears with a minimum diameter of 28mm—larger than a quarter. Each spear averages 100g before kitchen prep, bringing a taste of authentic Bavarian spring to the U.S.

In Germany, the arrival of white asparagus marks a cherished season filled with countryside pilgrimages, village Gasthäuser outings, and lively Spargelfests—asparagus festivals complete with traditional dishes, beer, and the crowning of a local "Spargel Königin". Harvesting white asparagus is a labor-intensive, four-year process, with farmers carefully tending fields and using a special knife to cut the spears before sunlight turns them green or purple. The season runs from Easter until June 24th, as harvesting beyond that point weakens the plant for future crops.

Once harvested, most people have their white asparagus stored wrapped in a moist cloth, then peeled, trimmed, and gently poached in a seasoned broth of salt, sugar, lemon, and butter. The peels and ends are simmered to create the base for Spargelcremesuppe, a beloved springtime starter. Typically served with new spring potatoes and drawn butter or hollandaise sauce, this dish is a true taste of German heritage and the joy of spring.
